Method of quantitative determination of the amount of anthocyanins in the raw materials of (Euterpe oleracea)

Abstract

The method of quantitative determination of the amount of anthocyanins in Euterpe oleracea by direct spectrophotometry is developed. The analytical maxima of the absorption of anthocyanins in the fruits of Euterpe oleracea – 625 ± 2 nm (maximum) – were determined. The optimal conditions for the extraction of anthocyanins from the raw materials of this plant are justified (extractant – ethyl alcohol 40%; the ratio of “raw material – extractant” – 1:100; extraction time – 60 minutes; the degree of grinding of raw materials 1.0 mm).
